Cheese Tortellini Vegetable Soup

February 26, 2010 0 comments

It’s yet another cold and snowy day here in Western Pennsylvania.  The perfect night for a belly warming bowl of homemade soup. Last night I gave another recipe from Cooking Light’s Fresh Food Fast a try.  I had never thought of putting tortellini in vegetable soup but thought it sounded like a good idea.  Boy was I right! Let me just say that this soup packs a powerful punch of taste.  There are so many [...]

Am I Really A Housewife?

February 25, 2010 2 comments

Is a housewife the same thing as a homemaker?  What if you have a job?  Does this make you any less of a wonderful and committed mother? All these questions came to mind as I was naming my blog, Cooking With The Last True Housewives.  I will tell you a little secret.  I work.  It is true.  I started my blog because I feel that being a housewife is my first job.  I cannot be [...]

Every couple of months I really love making a hearty pan of lasagna.  The only bad thing is that one recipe for lasagna makes too large of a pan for only 2 people.  After the second day of leftovers, I’m pretty much lasagna’d out. As an alternative, I occasionally like to make lasagna rolls instead.  This gives you the option of making as much or as little as you’d like. The lasagna recipe below makes [...]

Cheese Enchilada Casserole

February 19, 2010 3 comments

As I mentioned the other day, I’ve bought some new cookbooks for healthier eating. Today’s new recipe comes from “The Best of Cooking Light Everyday Favorites” cookbook. I really love this cookbook.  It has so many delicious and healthy recipes to choose from, even a whole section of light desserts!  And as an added bonus, each recipe lists the nutritional facts. So for our dinner last night, I chose the Cheese Enchilada Casserole located on [...]

Skip The Coffee, Drink Hot Tea Instead

February 18, 2010 0 comments

Over the past few months I’ve found myself drinking way to much coffee.  I work from home so it’s easy for me to just keep going to the kitchen for another cup of joe.  Although I don’t even drink a full pot, I find myself shying away from plain old water.  I may have a glass with dinner but then I turn to hot tea in the evening. Now some of you may think, heck [...]
